At Emu Bottom Biscuits our philosophy is to deliver more than a great tasting biscuit and brand but to also educate, broaden the mind and show off our country’s rich abundance of native produce through the inclusion of Australian Native Ingredients where possible in each of our products. Over the years we have used a wide range of Australian Native Ingredients in our Emu Bottom Preserves and Sauces as well as in our Emu Bottom Biscuit ranges. Some of these Ausralian Native Ingredients / Flavours have included: Lemon Myrtle, Lemon Aspen, Gumleaf Oil, Illawarra Plum, Bush Peppermint, and the ever popular Wattleseed used in our infamous ANZAC Biscuits, just to name a few.

Wild Wattleseed

Wild Wattleseed is an edible part of the seed of certain species of the Acacia (Wattle Tree). The Golden Wattle is Australia’s floral emblem, with the first day of spring being celebrated nationwide. The yellow blossom that blooms in the Australian Bush during this time is an amazing sight.

The inclusion of Wattleseed in the ANZAC biscuit recipe was driven through the recognised need at Emu Bottom Biscuits to accentuate the interest and awareness of Indigenous ingredients available in Australia.

Wattleseed is gathered from native trees in the Australian bush. Indigenous Australians aware of the flavour and goodness of wattleseed, have used it in their cooking for many thousands of years. It is also through the wise use of the resources of the Australian bush, how our Indigenous Australians have lived and maintained a balanced lifestyle in this land for over 40,000 years. The seeds of certain Acacia (Wattle Trees) are high in protein, and Aborigines, aware of its nutritional value, have gathered the seed to use in their cooking for at least 6,000 years.
